Why You Need This Recipe

  • Prep is super easy! You basically just toss the potatoes with olive oil and spices then dump them into your air fryer.
  • Potatoes are a very affordable and nutritious vegetable. Oftentimes they will go on sale and this is when I like to stock up.
  • Air fried potatoes are gluten-free, dairy-free, vegan, and Whole30-friendly!

Key Ingredients

Baby potatoes – Baby potatoes are just smaller versions of regular potatoes. They’re little potatoes! They’ve been picked early instead of letting them reach full size (sometimes they are called new potatoes). They’re the perfect size for roasting which means you don’t need to cut them.

Potatoes stay good on the counter for two weeks so I like to buy them whenever they go on sale and use them within that timeframe. You can use red or golden baby potatoes. You can also use fingerling potatoes which tend to be small.

Olive oil – Olive oil is a heart-healthy oil perfect for roasting veggies.

You can use another neutral oil if you don’t have olive oil on hand. See my list of the safest cooking oils.

Seasoning – Garlic powder, paprika, sea salt, and black pepper are simple seasonings that pack a lot of flavor punch. I always have them on hand and they taste great together.

You can use whatever spices or spice blends you like best. Italian seasoning or any other dried herb like rosemary, oregano, or thyme are other great choices.

Recipe Tips & Substitutions

  • You can double this recipe as long as your air fryer is large enough.
  • If you prefer to cut your potatoes in half, then you can reduce the cook time to just 16-18 minutes.
  • Roasted potatoes also taste great with toppings! Serve with ranch dressing, sour cream, butter, bacon, chives, shredded cheese, or hot sauce if you love toppings.
  • Check to see if you’re potatoes are pre-washed. You won’t need to wash and dry them if they’re already washed.
  • Try to fry the potatoes so they finish around the time you eat. If they sit for too long they will lose some of their crispy texture.
